I found this online somewhere and it quickly became one of my favorites.

It's called "Chicken Fajitas" because I've only tried it using chicken. It would probably work with any type of meat. Oh..and sometimes I eat it with rice instead of tortillas.


1 pound or so of chicken breast, sliced

2 tablespoons olive oil

1 tablespoon lime juice

0.5 teaspoon chili powder (NOT cayenne)

0.5 teaspoon powdered cumin

0.5 teaspoon black pepper

0.5 teaspoon salt

0.25-0.5 teaspoon hot pepper flakes

2 red onions, sliced

1 red pepper, sliced

1 green pepper, sliced


Slice the chicken breast and marinate it in the olive oil, lime juice, spices, salt & pepper, and hot pepper flakes

In a large, non-stick skillet saute the onions and the peppers until they start to soften. Add the chicken and stir-fry until done.

That's it!
